Zucchini Pesto Pasta!

As people who were born and raised in Italian families, Steph and I focus many of our recipes on making those guilty pleasures fit into the meal plan!



This isn't the time or place to go into detail about the main issue with pastas. You know it. You love them. Carbs. It doesn't take much longer than a five minute google search to learn the negative effects of carbohydrates and what they do to our bodies.

IPersonally, from the bloating to that food baby feel, to the personal conflict that arises when you sit down to a beautiful bowl of Chicken Carbonara. Not to mention the instant self-loathing and regret when you want to die from above-mentioned food fetus.

Well fear no more! Team Live Fit loves finding ways to enjoy those guilty pleasure foods and feel great after!

the #1 most important thing you will need for this recipe is a Vegetable Spiralizer!
This great one by OXO fits into any drawer and its not only for Zucchini, we’ve done sweet potatoes, carrots, cucumber, and regular potatoes for some curly fries! 


Zucchini Pesto Pasta

  • Twist your Zucchini through your spiralizer but just ensure you have enough for how much you want to make! Have no fear if you make too much, it holds well over night smile emoticonor you can freeze it!
  • Bring a pot of water to a boil & give a quick couple minute bath to your Voodles (veegie-noodles, see what I did there?) No need to be persice with time because they’re delicious raw but this is to soften them up a smudge.
  • In a non-stick frying pan add a teaspoon of your favourite oil, seasonings, and how much pesto (home made or store bought) you’d like!
  • TOSS in your Voodles! 
  • Place on a plate and add any toppings you would like! My favourite include:
    • Tomatoes/bruschetta mix
    • peppers
    • onions
    • carrots
    • cucumbers zoodle’d up!
    • and half a Avacado
The oil from the pan & pesto is good enough to dress it but if you still find it dry toss in some balsamic and a little more oil!

This is also amazing with a home made pasta sauce or cauliflower alfredo, really your options are endless!

For those of you on the 21 Day Fix this would equate to:

2.5 Green 1 Blue (Avacado) 1 Teaspoon and 1 Red (Add some chicken!)
